[Behind the Scenes] Sumo Stable Chanko(Sumo Hotpot Stew)(Sumo Hotpot Stew)(Sumo Hotpot Stew) - Oitekaze Stable

"Sumo Beya Chanko" is a popular freeze-dried product that allows you to easily enjoy chanko nabe made in Sumo Stables.

 

We received detailed recipes from the stable masters and sumo wrestlers of each stable, and created freeze-dried prototypes.

In this final installment, we'll show you how the Oitekaze stable tasted their "Oroshi Chanko"!

The origin of "Oroshi Chanko" is the chanko nabe from "Chanko Ryori Yakko" in Kengun Honmachi, Kumamoto Prefecture.
"The meatballs are exquisite, and it's incredibly delicious when dipped in the special sauce with plenty of grated daikon," said the stable master. He wanted to eat it at the stable too, so he had a sumo wrestler recreate it, and that's how it started.
Could we get close to the taste that captivated the stable master? To find out, we visited the Oitekaze stable, located in Soka City, Saitama Prefecture.

After practice, we asked Oitekaze Oyakata (former Maegashira Daishoyama) to taste the prototype!

"It might even be better than what we make in the stable," said the stable master humbly. ちゃんこを食べてほほえむ追手風親方"The chicken meatballs are good too! It's a little bland, and I'd like a bit more yuzu aroma. Let's ask the chanko master for his opinion too," he said, summoning Daishosei.

"It would be good if we could make the flavor a little stronger with white dashi and add a citrusy aroma."ちゃんこを食べる大翔成さんOroshi chanko is a popular dish that's quickly devoured when made, even though it's not made frequently due to the effort involved. It's often requested when guests come, and they even make it twice during a tournament.

During the interview, the stable master said, "Have some," and gave us the miso chanko from that day! It was a hearty and mild-flavored chanko that you'd want to eat every day.
I was deeply moved, thinking that this is the taste that Endo and Daieisho eat... (thump-thump).
